Radicchio Salad (ruh-dee-kee-ow)

10 Health Benefits of Super Food Radicchio


  1. It is high in Vitamin C, which boosts immunity by strengthening the body's natural defence. Vitamin C also helps the body absorb iron.

  2. Anti-aging properties, rich in Antioxidants to shield your cells from ongoing damage.

  3. Liver health. Radicchio promotes bile production, improves digestion, and protects the liver from damage from free radicals.

  4. Properties in Radicchio stimulate bile production, which helps regulate digestion.

  7. It contains Inulin, which improves the microflora in your stomach to help with gas, and is high in fibre, which suppresses cravings.

Salad Ingredients:

1 Radicchio Rosso

A selection of your favourite greens, including peppery Rocket. Cos heart etc

2 Tbsp Pomegranate arles

2 Tbsp Toasted pine nuts or chopped walnuts

Optional: Mandarin or sliced orange, sliced dates

If you would like to add some dairy, either Mozzarella Fior Di Latte or a little Gorgonzola would be good.


Dressing Ingredients:

A drizzle of honey

2 Sprigs of fresh thyme

2 Tbsp of Balsamic vinegar, or for a softer flavour, use Pomegranate vinegar

2 Tbsp Extra virgin olive oil

Zest 1/2 lemon

A pinch of Herb salt

2 Tbsp boiling water


For the Salad:

Remove the outer couple of leaves of the Radicchio and discard.

Take the remaining leaves off and soak them in ice water for 15 minutes to make them nice and crisp.


While the leaves are soaking, make the dressing-


For the Dressing:

Strip the leaves of the thyme.

Dissolve the honey in the boiling water and add the fresh thyme. Then add the other ingredients and combine.


Take the Radicchio out of the ice bath and cut out the white rib from all of the leaves (to reduce the bitterness).

Pick out 2 of the prettiest leaves, cut them finely, and set them aside for the salad.

For the rest of the leaves, cut into quarters.

Heat a pan and add a little of the combined dressing you have just made.

Add the leaves and sauté gently until soft.

Set aside to cool.


Gather all your greens together and make your salad.

Add in the sautéed Radicchio and other ingredients.

Drizzle over with the dressing and serve.

Optional: Squeeze over with a little mandarin juice.
